Ingredients

  • 250g noodles
  • 200g spinach (deep-frozen)
  • 2 eggs
  • 75 ml milk
  • Salt
  • Pepper
  • Nutmeg
  • 2 garlic gloves
  • 2 tbsp. oil

Instruchtions

  1. Cook the noodles as instructed.
  2. Heat the oil in a pan, roast the minced garlic gloves.
  3. Add the spinach and cook for around 10 minutes. Season with nutmeg. Stir once in a while.
  4. Mix eggs and milk. Season with pepper and salt.
  5. Add the egg and milk mixture to the spinach. Cook until the egg is done.
  6. Mix in the noodles. Cook for around 2 minutes more.

Ingredients

  • 300g macaroni
  • Salt
  • Pepper
  • 1 small red onion
  • 5 tbsp. butter
  • 3 tbsp. flour
  • 400 ml milk
  • Nutmeg
  • 200g grated cheese

Instructions

  1. Cook the macaroni as instructed.
  2. Heat 3 tbsp. butter in a pan and chop the onion. Braise them lightly and add flour. Sweat everything with stirring until golden.
  3. Add the milk gradually. Season with salt, pepper and nutmeg.
  4. Cook for around 5 – 10 minutes on low heat. Stir once in a while.
  5. Add the cheese to the sauce and stir until molten.
  6. Mix the macaroni with the sauce, add the 2 tbsp. butter and let everything cook a little longer.

Ingredients

  • 200g mozzarella
  • 1 can of quartered tomatoes with sauce
  • 2 cloves of garlic
  • 1 package of mini spaetzli
  • Salt
  • Pepper
  • Basil
  • 4 tbsp. olive oil
  • 4 to 5 tbsp. whipped cream

Instructions

  1. Cook the mini spaetzli as instructed in saltwater.
  2. Mince the garlic gloves.
  3. Heat oil in a pan and add the garlic, tomatoes and sauce. Cook for max. 5 minutes. Season with salt and pepper.
  4. Mix in the spaetzli.
  5. Add mozzarella and whipped cream.
  6. Cook until the mozzarella is molten with stirring. Season again with salt, pepper and basil.

  • 250g noodles
  • 1 cup cream cheese (pepper & red pepper)
  • 1 can tomatoes
  • 1 garlic glove
  • 1 Zucchini
  • A little bit of milk
  • Salt
  • Pepper
  • ¼ tube of tomato purée

Instructions

  1. Cook the noodles as instructed.
  2. Roast the summer squash with the garlic.
  3. Add crème cheese, milk, tomatoes and tomato purée.
  4. Season with salt and pepper.
  5. Add the cooked noodles, and serve.

Just a quick information. This recipe is NOT vegetarian. If you want it to be, you need to use another cream cheese because Brunch is made with animal rennet.

Ingredients

  • 250g Spaghetti
  • ½ can maize
  • 10 Cherry Tomatoes
  • 2 ripe Avocados
  • 2-3 garlic cloves
  • Juice from half a lemon
  • Handful basilic
  • Handful parsley
  • 2 tbsp. Olive oil
  • Salt & pepper
  • Water

Instructions

  1. Prepare the noodles as instructed.
  2. Half the avocados, remove the stone and put the fruit flesh in a blender.
  3. Chop the garlic cloves and herbs. Put them in the blender as well.
  4. Blend until everything is blended well.
  5. Gradually add the oil.
  6. Season with salt and pepper.
  7. Reduce the sauce with water until it reached the consistency you like.
  8. Mix the noodles with the sauce, maize and cherry tomatoes.
  9. Serve! J

Sunday Treats | Broccoli Au Gratin

Ingredients

  • 750g broccoli [I used frozen]
  • 1 onion
  • 1 garlic glove
  • 3 tbsp. butter
  • 60g flour
  • 400ml cold milk
  • 1 ball of mozzarella
  • 80g grated Parmesan
  • salt
  • pepper
  • nutmeg

Instructions

Parboil the broccoli for 3 minutes in a pot with salt water. Drain in a sieve, rinse with cold water and let it drip.

Peel the onion and garlic and dice it.

Heat the butter in a pot and lightly braise the onion and the garlic dices.

Add the flour. Sweat the flour for around 1 minute by low temperature with stirring.

Bit by bit give in the milk. Simmer the béchamel for around 5minutes with stirring. Season with salt, pepper and nutmeg.

Preheat the oven on 180°C. Put the broccoli in a baking dish. Douse with the béchamel.

Spread the cut mozzarella on top of it. Sprinkle the parmesan on the gratin.

Bake for 25 minutes.

Serve with potatoes. At least it’s what we think fits best. But we love potatoes maybe a little too much. 😉

Sunday Treats | Baked Potato with garlic mushrooms

Ingredients 

for the potatoes

  • 4 medium potatoes
  • salt and pepper, to taste
  • 1 1/2 cups chopped broccoli florets
  • 2 cups chopped cauliflower
  • 1/2 cup low fat buttermilk
  • 1 cup (4 ounces) shredded sharp cheddar cheese

for the mushrooms

  • 225g whole white mushrooms
  • 2 gloves of garlic (minced)
  • 2 tbsp. Cream Cheese
  • 1 tsp. Italian herbs (frozen or fresh)
  • Salt
  • Pepper
  • 1 tsp. olive oil

Instructions

for the potatoes

  1. Cut the potatoes in two. Drizzle a little oil on top of them and bake them for around and hour by 425 F. Let them cool down.
  2. Cook the broccoli for three minutes in salted water.
  3. Cook the cauliflower for eight minutes in salted water.
  4. Put the cauliflower in in a bowl. Put the broccoli aside.
  5. Preheat the oven to 400 F.
  6. Grab the cold or lukewarm potatoes and hollow them out. Give the innards to the vegetables and mash everything. Mix in butter and salt.
  7. Fill the mixture into the potatoes and put the broccoli on top.
  8. Sprinkle cheese on top and bake again for 10 minutes.

for the mushrooms

  1. Heat oil in a pan. Cook the mushrooms and garlic until the water comes out of the mushrooms (if that isn’t the case add a little bit of milk).
  2. Add the cream cheese, herbs, salt and pepper.
  3. Cook until everything is heated.
