Sunday Treats | Baked Potato with garlic mushrooms

Ingredients 

for the potatoes

  • 4 medium potatoes
  • salt and pepper, to taste
  • 1 1/2 cups chopped broccoli florets
  • 2 cups chopped cauliflower
  • 1/2 cup low fat buttermilk
  • 1 cup (4 ounces) shredded sharp cheddar cheese

for the mushrooms

  • 225g whole white mushrooms
  • 2 gloves of garlic (minced)
  • 2 tbsp. Cream Cheese
  • 1 tsp. Italian herbs (frozen or fresh)
  • Salt
  • Pepper
  • 1 tsp. olive oil

Instructions

for the potatoes

  1. Cut the potatoes in two. Drizzle a little oil on top of them and bake them for around and hour by 425 F. Let them cool down.
  2. Cook the broccoli for three minutes in salted water.
  3. Cook the cauliflower for eight minutes in salted water.
  4. Put the cauliflower in in a bowl. Put the broccoli aside.
  5. Preheat the oven to 400 F.
  6. Grab the cold or lukewarm potatoes and hollow them out. Give the innards to the vegetables and mash everything. Mix in butter and salt.
  7. Fill the mixture into the potatoes and put the broccoli on top.
  8. Sprinkle cheese on top and bake again for 10 minutes.

for the mushrooms

  1. Heat oil in a pan. Cook the mushrooms and garlic until the water comes out of the mushrooms (if that isn’t the case add a little bit of milk).
  2. Add the cream cheese, herbs, salt and pepper.
  3. Cook until everything is heated.
