- 1 kg potatoes, pealed
- 2 tbsp. vegetable broth
- 200g herbal soft cheese
- salt & pepper
- Cook the potatoes in water and vegetable broth. Use only so much water that the potatoes are covered.
- Mash the potatoes with an immersion blender in the water.
- Mix in the herbal soft cheese and let it cook for just about a minute, then mash again.
- If you like you can mix in a little cream or water for the perfect consistence.
