Sunday Treats | Herbal Potato Soup




serves 4
  • 1 kg potatoes, pealed
  • 2 tbsp. vegetable broth
  • 200g herbal soft cheese
  • salt & pepper


  1. Cook the potatoes in water and vegetable broth. Use only so much water that the potatoes are covered.
  2. Mash the potatoes with an immersion blender in the water.
  3. Mix in the herbal soft cheese and let it cook for just about a minute, then mash again.
  4. If you like you can mix in a little cream or water for the perfect consistence.
  5. Serve! (:
