- 200 g couscous salad
- 1 yellow pepper
- 2 tomatoes
- 2 shallots
- 1 red onion
- 3 cloves of garlic
- 1 bunch of parsley
- 1 tsp. ground coriander
- salt & pepper
- 4 tbsp. olive oil
- Douse the couscous with 200ml boiling saltwater. Let it well for 5 minutes, than loosen it up with a fork and let it cool down.
- Meanwhile dice the pepper, the red onion, garlic and the tomatoes. Cut the shallots into small rings. Mince the parsley.
- Put the vegetables into a bowl and season it with coriander, salt and pepper. Mix the olive oil and the cold couscous into the vegetables.
