Sunday Treats | Couscous Salad

  • 200 g couscous salad
  • 1 yellow pepper
  • 2 tomatoes
  • 2 shallots
  • 1 red onion
  • 3 cloves of garlic
  • 1 bunch of parsley
  • 1 tsp. ground coriander
  • salt & pepper
  • 4 tbsp. olive oil




  1. Douse the couscous with 200ml boiling saltwater. Let it well for 5 minutes, than loosen it up with a fork and let it cool down.
  2. Meanwhile dice the pepper, the red onion, garlic and the tomatoes. Cut the shallots into small rings. Mince the parsley.
  3. Put the vegetables into a bowl and season it with coriander, salt and pepper. Mix the olive oil and the cold couscous into the vegetables.
