Sunday Treats | Greek Bulgur Salad

Ingredients

  • 1 ½ cups bulgur
  • 3 cups boiling water
  • ¼ cup lemon juice
  • 1 cucumber, chopped
  • ½ cup cherry tomatoes, halved
  • ¼ cup fresh parsley, minced
  • ¼ sweet red peppers, chopped
  • 1 red onion, chopped
  • 3 tbsp. olive oil
  • 2 tbsp. lemon juice
  • ¼ tsp dried oregano
  • ¼ tsp pepper
  • 1/8 tsp cayenne pepper
  • ¼ cup feta cheese, crumbled
  • salt

Instructions

  1. Mix water with ¼ cup lemon juice and ½ salt.
  2. Stir bulgur in boiling water. Cover & let stand for 30 minutes or until liquid is absorbed.
  3. Combine cucumber, tomatoes, parsley, red peppers, onion and basil. Stir in well drained bulgur.
  4. Whisk together oil, oregano, pepper, cayenne, remaining juice salt and salt.
  5. Pour over bulgur mixture.
  6. Sprinkle with cheese.
